For this upcoming Sant Joan festival, we're presenting a very special collaboration with L'Atelier Barcelona , a pastry shop located in the heart of Barcelona's Eixample district. This avant-garde space combines a baking and pastry school with a tasting area, creating a perfect combination that fuses the creativity and teaching skills of chef Eric Ortuño with the business vision and management skills of chef Ximena Pastor .
The collaboration between Ramos Boqueria and L'Atelier has resulted in Coca Llaminera: an exquisite puff pastry with Jabugo ham, aged for up to 48 months. The slices that crown this delicacy come from the Maza, the central part of the ham, prized for its silky texture. To achieve a caramelized effect, a special Iberian fat cream and ham cubes have been added inside the pastry, creating a unique and delicious experience.
