We present a very special collaboration with L'Atelier Barcelona , a pastry shop located in the heart of Barcelona's Eixample. This avant-garde space combines a baking and pastry school with a tasting area, creating a perfect formula that fuses the creativity and teaching ability of chef Eric Ortuño .
The collaboration between Ramos Boqueria and L'Atelier has resulted in Coca Llaminera: an exquisite puff pastry with Jabugo ham, matured for up to 48 months. The slices that crown this delicacy come from the Maza, the central part of the ham, highly appreciated for its silky texture. To achieve a caramelized effect, a special Iberian fat cream and ham tacos have been added to the interior of the dough, creating a unique and delicious experience.
